Dictionary and Tips


Chocolate liquor: Chocolate liquor is pure chocolate in liquid form. Not to be confused with chocolate liqueur, which is a chocolate-flavoured alcoholic beverage.

Microwaving milk: Get friendly with your microwave cause every make of microwave is different. Jot down the time it takes for your microwave to heat a cup of milk, whether straight from the fridge or room temperature. Boiled-over milk is not a pretty sight. As a guideline, it takes about 1 minute for my microwave to heat milk to the perfect temperature if from room temperature of 1 minute 24 seconds for chilled milk.

Simmer: Simmer and boil are two completely different things.
Slight bubbling at the side of the saucepan = simmer = turn off the heat
Big bubbles = start again = major cleaning


Stovetop method: DO NOT leave your milk out of sight for even 1 second (okay, 1 second is fine. No more than 30 seconds) as milk has a tendency to boil over or worse, burn. Have on a hand a dedicated small saucepan and wooden spoon to avoid your milk having hints of chilli and turmeric. Also, stir the milk once in a while. You do not want a film to form on the surface of the milk or the bottom of the saucepan, unless you like that kind of thing (I do, actually).
